Pork Shanks (Osso Bucco Cut) from Heritage Foods USA

These are pork shanks that I wanted to make a bit lighter than a usual osso to be more appropriate for the Spring season.

Here are the shanks in raw form:

Ingredients: 4 pork shanks, 1 carrot, 2 celery stalks, 1/2 white onion, 1/2 bottle of red wine (I used some leftover Pinot Noir)

Brown the shanks on moderately high heat in the pressure cooker.  Add the vegetables to the pot, cook until they sweat and just begin to take on color.  Add the wine, salt and pepper.  Make sure that the shanks are covered with liquid.  Use water if necessary.  Bring to pressure for 45 minutes. 

Pre-heat the oven to 450 degrees.  Use the quick-release method to relieve the pressure in the cooker.  Strain the sauce and skim the fat.  Put the shanks and vegetables in a baking pan and put them in the oven.  While this roasts, reduce the skimmed sauce by half or more if you had to use a lot of water.  After half an hour, take the shanks out of the oven and add the reduced sauce to the pan.

This would be great accompanied by pasta, risotto, and salad.
